Giuseppe Rainoldi began sparkling Nebbiolo grapes in the late 1970s. Rainoldi cools the newly collected Nebbiolo bunches through the use of dry ice filled containers. The drastic lowering of the temperature, after a short cold maceration and a soft pressing, give the characteristic pale pink color. The subsequent fermentation takes place for a few weeks in the cold in the absence of the skins. The base sparkling wine rests in stainless steel tanks until spring when it is bottled and remains on the lees for another 36 months.

Bright, light pink onion skin. The bubbles are fine, numerous and persistent. The olfactory examination denotes clear fruity and floral hints: litchi, nectarine peach, wild flowers. In the mouth it is dry, fresh, with a good balance. Excellent acid vein.
Suggesed food pairings while tasting this sparkling rosè
Excellent as an aperitif. It goes well with first and second courses based on fish. Serve at a temperature of 6/8, therefore. in a tapered glass.
