The vinification of this wine involves the use of exclusively 100% pure Riesling grapes. The origin of the vines falls within the company areas in the Alto Adige Val Venosta area. The harvest takes place strictly by hand between the beginning and the middle of October. The wise and conscientious vinification follows: the grapes are processed with great care and transported to large acacia wood barrels where fermentation takes place. There follows an aging of ten months on coarse lees, always in the same barrels. After bottling, the Riesling is stored in the company for another 12 months.
Riesling DOC Falkenstein’s features
A straw yellow colour. The scent on the nose has notes of citrus, lemon and cedar, white peach and apricot and a hint of hydrocarbons. In the mouth, the marked acidity is balanced by a slight residual sugar. Elegant and deep finish.
