Asolo Prosecco Superiore DOCG Brut is made from Glera grapes grown in the hills of the Asolo DOCG area, characterized by mineral-rich soils and a microclimate favorable to aromatic elegance. Harvesting is done manually with selection of the best bunches. After soft pressing, the flowering must is subjected to cold static decantation to preserve its purity. Alcoholic fermentation takes place in temperature-controlled steel with selected yeasts. The base wine is then refermented in an autoclave according to the Charmat Method, with attention to controlling temperatures and pressure to obtain a fine and persistent perlage and keep the varietal aromas intact.
Characteristics of this Prosecco di Montelvini
It has a bright straw yellow color with greenish reflections and a fine, continuous perlage. On the nose it expresses elegant scents of white-fleshed fruit such as apple and pear, accompanied by floral notes of acacia and wisteria. The aromatic profile is fresh and clean, with mineral nuances that reflect the hilly territory of origin. On the palate it is dry, lively and well balanced, with good flavour and a harmonious and persistent closure.

It pairs very well as an aperitif and with light appetizers. It is ideal with crudités of fish, shellfish, seafood and delicate dishes of Mediterranean cuisine, thanks to its freshness and elegant structure. Serve at 6-8°C.
