Pecorino d'Abruzzo DOC “Hydra” from Tenuta Antonini is a white wine that represents one of the most interesting expressions of the Pecorino grape, a native variety of central Italy rediscovered in recent decades for its great qualitative potential. It is produced in the Teramo Hills, in an area characterized by an ideal microclimate thanks to the proximity of the Adriatic Sea and the presence of the Gran Sasso massif, which guarantee strong temperature variations and perfect aromatic ripening of the grapes. The vinification of “Hydra” is marked by the maximum valorization of the fruit. After manual harvesting, the grapes are gently pressed and the must ferments in steel at a controlled temperature, thus preserving the aromatic richness typical of Pecorino. The refinement continues in steel, with possible permanence on fine lees to increase structure and flavor complexity, while maintaining a fresh and clean style, without the use of wood.
Features of this Pecorino Hydra
On organoleptic examination it appears with a bright straw yellow color, often with greenish reflections. On the nose it is intense and characteristic, with notes of ripe citrus, white flowers, yellow-fleshed fruits such as peach and apricot, and a slightly herbaceous and mineral component that recalls the territory. On the palate it is a wine with a good structure, more decisive than other whites in the area, with a marked freshness and a typical flavour that extends its persistence. The sip is full but balanced, with a long and slightly citrusy finish.
Recommended pairings with this Abruzzese white wine
From a gastronomic point of view, it is a very versatile wine but with a more marked personality than lighter whites. It pairs well with seafood appetizers, seafood first courses, shellfish, light white meats, and fresh or medium-aged cheeses, but can also support more structured preparations thanks to its good acidity and structure. The ideal service temperature is between 8 and 10 °C.
