This red wine from Cantina Bava comes from one of the Bava family’s most historic vineyards, situated on the Cadodo hill in Cocconato, in the Asti area, where the Bava family themselves live and have been cultivating the land that symbolises these places for 13 generations: the series of hills known as ‘le serre’, in particular, boasts a strong tradition in Nebbiolo production, which is why Nebbiolo vines were replanted there in the late 1990s. This decision was subsequently rewarded with the Monferrato DOC Nebbiolo designation of origin. The 100% Nebbiolo grapes come from vineyards situated at an altitude of 375 metres above sea level, on white limestone and marl soils facing south and south-west; once the manual harvest is complete, the grapes are destemmed and crushed. This is followed by fermentation for one week in contact with the skins in stainless steel tanks, where malolactic fermentation is also completed. The wine is aged in 15-hectolitre wooden barrels for 10 months and then in the bottle for a few months.
Characteristics of this Piedmont wine
It has a bright ruby red colour with a bouquet rich in aromas reminiscent of violets, wild roses and red fruits. On the palate, it impresses with its structure and remarkable freshness, with a pleasant finish.
