From the vinification of grapes of Dolcetto D'Alba this simple wine is born but of great tradition for the Piedmontese society. Appreciated in Italy and in the world for its immense versatility. The harvest of the selected grapes takes place between the middle and the end of September when they reach the right degree of ripeness. Then follows in the cellar the destemming-crushing and alcoholic fermentation at a controlled temperature of about 28ºC in stainless steel tanks. The average duration of maceration is about 5 days. Then malolactic fermentation in November, develops in steel. Finally the aging with a stay of several months in stainless steel tanks.
Characteristics of this Dolcetto D'Alba Doc
The appearance of the wine is ruby red with full violet reflections. The aroma is intense, with hints of cherry and ripe plum. The taste is balanced, fresh, tannic, fragrant and vinous with a pleasantly bitter aftertaste.
Pairings recommended tasting this Piedmont red wine
The perfect wine to be consumed daily; it goes well with appetizers, first courses and meat dishes, mainly white. A must try with the agnolotti del plin with roast sauce. The optimal serving temperature is 16,5°C.
