The wine is made from Friulian grapes from vineyards located in the lower Cormons area. In the cellar, winemaking takes place in white, without maceration, through a soft pressing of the whole grapes. Fermentation takes place at a controlled temperature around 19 °C with selected yeasts. The wine is then aged for about a year in large-capacity oak barrels, a choice that helps give it structure and complexity, while maintaining balance and finesse. Malolactic fermentation is not carried out.
Characteristics of this Friulian wine
It has a bright greenish color. On the nose, it stands out for its typical and unconventional aromas compared to international grape varieties, with notes of hazelnut and bitter almond that replace the classic fruity aromas. On the palate it is a full-bodied wine, rich in glycerin, with a slight tannicity reminiscent of licorice. The finish is slightly bitter, a characteristic that instead of being unpleasant gives elegance, finesse and personality to the wine.
Recommended pairings with this white wine from Ronco del Gelso
It is an extremely versatile wine at the table and lends itself to numerous gastronomic combinations. It pairs particularly well with ham, carpaccio of both meat and fish and pasta or rice first courses characterised by a slight sweet tendency due to the presence of starch, with which it manages to create a very harmonious taste balance. Serve at 12°C.
