This “Spumante Millesimato Riserva D’Antan” is produced with traditional methods. It offers a complex intensity of sensations. With its long aging in the bottle, about 10 years in contact with local selected yeast, we obtain a unique wine that doesn’t betray. Its unexpected freshness is joined to honey aromas mixed with spices, dried fruits and chocolate. A rare, harmonious wine, thought for those experts who could appreciate it. It is the perfect result of the cooperation of nature and man. We use 100% Cortese grapes, coming from the hills located in the production area of Gavi DOCG. Classic fermentation in the bottle followed by a long period of aging, maturation on yeasts for even more than ten years. It is suggested to drink it max three years after “degorgement”
Features of Spumante Millesimato D’Antan La Scolca winery
Light gold yellow colour with bright reflections. Its perfume is intense and persistent. The first impression is characterized by intense hints of exotic fruits that are transformed in honey and spices after a while, to build a context that we could define soft and elegant. Its taste is important, dry, strong and fresh, with a smooth feeling caused by the long rest on yeasts. Pleasant sourness surrounded by a nice sensation of almond.
