This Apulian red wine comes from 100% Aglianico grapes raised in the vineyards located in Leverano, Lecce, on soils of alluvial origin. Following the harvest, the grapes in boxes undergo a slight over-ripening in order to then be able to face destemming and soft pressing. This is followed by the maceration phase for about 10 days at a controlled temperature and fermentation in steel. The aging, on the other hand, requires a stay in French wooden barriques for 14 months and then in oak barrels for another 6 months.
Characteristics of this Apulian wine
The organoleptic examination shows an intense ruby red color with garnet reflections, which become more and more accentuated with aging. The olfactory notes refer to berries, tobacco, vanilla and spices while on the palate it is characterized by soft tannins, harmony and structure.
