From the vinification in purity of Lagrein. The autochthonous variety of Lagrein, thanks to the strict selection in the vineyard and the low yields, has risen in recent decades to the role of the top red wine of Alto Adige. In the vineyard are preferred warm and possibly sandy soils, in the cellar the passage in wood is essential. For the aging of the Lagrein Riserva are used grapes of selected vineyards of the Lagrein classic line, mainly located in the valley floor of the Bolzano basin. The result is a complex red, which fascinates for its robust structure and the multiplicity of aromas. The vineyards are located in Gries, Leitach "Coste" and Cornaiano. South-South/East, South/West exposure. The soils are characterized by morainic deposits and the prevailing form of breeding is that of Guyot. Vinification involves fermentation in stainless steel vats. Then follows the malolactic fermentation and about 12 months of aging both in barrique (50%) and in large wooden barrels (50%). After assembly further refinement in steel.
Characteristics of Lagrein Riserva red wine
On the organoleptic examination it has a dark red aspect tending to black. The aroma is intense of cherry, blackberry and dried plum. The taste is soft, complex, full-bodied.

This Lagrein is accompanied by hearty dishes such as beef cheek stew, grilled red meat, Tyrolean goulash, game and mature cheeses. The optimal serving temperature is 18 ºC in a large Ballon glass that allows the wine to be well oxygenated in the glass.
