The renowned Il Poggione agricultural company , produces the refined Brunello di Montalcino Reserve Vigna Paganelli only in the best years and in very limited quantities. This wine comes only from the collection of grapes from the oldest vineyard of the "I Paganelli" company, planted in 1964. These vines, used as a reference clone for the planting of the new vineyards, produce very high quality grapes which are harvested selecting the best and most mature bunches one by one. After the manual harvest, the must ferments for about 20 days in contact with the skins. Subsequently the wine spends 48 months in large French oak barrels followed by a long period of refinement in the bottle. The denomination is that of Brunello di Montalcino Riserva Vigna Paganelli DOCG and naturally the blend used for its production is 100% pure Sangiovese. The vine used, as per company tradition, is the one called "Vigneto Paganelli" planted in 1964. The cultivation system is the "Double upside-down" one. The harvest is done by hand. The vinification continues for 20 days with the "submerged cap" system and takes place in stainless steel tanks with indigenous yeasts at a controlled temperature of 25/28 °C. The malolactic fermentation is completely carried out in steel tanks. The refinement takes place it lasts for 48 months in large 30 and 50 hl French oak barrels followed by a long period of refinement in the bottle.
