From the careful and conscientious vinification of the Dolcetto grapes grown in the Piedmont. Following Chiarlo tradition, harvest happens by hand. Vinification involves fermentation in steel with maceration with the skins for 7/8 days at 27 - 28 ° C. Refinement develops for at least 3 months in steel.
