For the vinification of this label that reflects the local tradition, 100% pure Dolcetto grapes are used. The process of vinification foresees that the grapes, just harvested, are quickly brought into the cellar in order to arrive perfectly intact. Gently pressed and de-stemmed, it is fermented in thermo-conditioned ferments. Then the maceration of 5 days with racking of the product not yet completely dry, which ends the fermentation slowly and without the contact of the skins, thus enhancing the particular fruity. This is followed by the aging of the wine which is poured into vitrified cement vats, specially made with a cork insulation, maintains the post-temperature for a long timefermentative of about 20 suppositories C. In this way the malolactic fermentation starts spontaneously and ends already in November. Dolcetto d'Alba Bossèt expresses its best characteristics in the first years of life. The wine has a ruby red colour with intense violet nuances. The scent is fresh, fragrant and fruity and immediately reminds the cherry cherry. The taste is dry, pleasantly harmonious is due to the low acidity.
