The renamed Santa Margherita winery in Veneto produces this light sparkling wine which has particular sensorial, refined, delicate and elegant characteristics. It is produced by 100% Glera grapes cultivated in Veneto at 400 meters above the sea level. The moraine soils mostly clay, allow the grapes to achieve unique smells, particularly refined. The cultivation method of the Glera is the Sylvoz whom density is 2300-3500 trees per hectare. The harvest takes place in the first half of September to permit the fermentation to achieve a proof of 11,5%. For the Dégagé Santa Margherita the re-fermentation occurs with selected yeasts at 15°-18°C with an opportune resting time on the yeasts. The accurate final step of isobaric bottling and a short resting period in the glass permit to obtain freshness and smell fragrances during the time.
