This Prosecco Springo Blue by Le Manzane is made from pure Glera grapes from the Collina di Formeniga hillside in the municipality of Vittorio Veneto. The vineyards are planted on clayey soils on a hillside. Once the grapes are hand-harvested, only the free-run must is used and cold-settling at 5-7°C. Alcoholic fermentation then begins, followed by a three-month aging on the lees. The secondary fermentation, the process that creates the characteristic bubbles, takes place in 100-hl pressure tanks, with a one-month second fermentation in the tanks, according to the Charmat Method. This Prosecco then undergoes a further 20-day bottle aging before being released.
Characteristics of the Springo Blue
It has a straw yellow color and a fine, persistent perlage typical of Prosecco. On the nose, it's an explosion of green apple, wisteria, lily of the valley, thyme, and sage. On the palate, it's fresh and pleasantly savory, with excellent persistence.
Recommended pairings with this Prosecco Le Manzane
Perfect as an aperitif, but also pairs well with fish dishes, including raw fish, and pizza. Serve at 5-7°C.
