This Chardonnay Numen wine from Paololeo Winery is part of a line dedicated to grapes used in the production of great wines, which are the result of careful vinification and ageing in oak. The grapes used are 100% Chardonnay, the most famous white grape variety in the world, with an imposing structure and particularly long ageing potential. The harvest at the end of August is followed by crushing and pressing, with subsequent maceration for 8-9 hours at a temperature of 10°C. Fermentation takes place in American and French oak barriques and, once fermentation is complete, ageing continues in contact with the lees, which are periodically stirred with batonnage. Maturation requires 6 months in steel and a final 3 months in the bottle.
Characteristics of this Apulian wine
It has a straw yellow colour with golden reflections and aromas of ripe fruit, spices and vanilla. On the palate, it has excellent structure and elegance, with a long and persistent finish.
