A highly refined Champagne that is expressed through a prestigious blend, composed of 70% Pinot Noir and 30% Chardonnay grapes. The vinification involves the use of the method which consists in operating a double fermentation of the must at a controlled temperature and with the second fermentation in the bottle. Aging on the yeasts is more than three times that allowed by the 15-month disciplinary, this is to give the wines greater complexity. Aging ranges from 3 to 4 years. The finesse of the perlage of our Cuvées is given by this long aging, by a noble raw material and by a perfectly controlled, fresh and constant cellar temperature.
