Vinification involves 50% Nero d'Avola grape and 50% Frappato from organic cultivation, with no chemical intervention. From Alte Caves, a fantastic place for viticulture, with the limestone ridges on which the city of Vittoria stands. This wine made from Frappato and Nero d'Avola grapes is the perfect synthesis of Sicily. Harvest takes place during the first ten days of October. Vinification involves indigenous yeasts, and the maceration takes 30 days on the skins. Aging takes place for 32 months in 25 hl Slavonian oak barrels, 4 months in bottle. No filtration.
Cerasuolo di Vittoria Grotte Alte’s features
A fairly dark ruby red color. Fruity hints of plum, cherry and currant are replaced by light spicy nuances of vanilla and black pepper. Taste is round, warm, with excellent structure thanks to the perfectly worked tannins. It closes with a long finish characterized by a very pleasant acid note.
