The vines used are those of Nerello Mascalese and Nerello Cappuccio. The origin is that of the territory of Castiglione di Sicilia, near Catania in the Cavanera Etnea estate. Manual harvesting of the grapes takes place during the first half of October. The vinification of Firriato's Cavanera Etna Rosso involves the use of the traditional red method in conical wooden vats. The refinement of the wine extends for 12 months in Slavonian oak barrels.
