Born as a tribute to Diego Planeta, founder of this renowned Sicilian company, Cabernet Franc Didacus comes from a small vineyard near Menfi where Cabernet Franc grapes are grown and used alone for its production: the vineyard occupies an area of about 5 hectares and is located in Piano del Sommacco near Agrigento, at 440 m asl; the bunches are harvested by hand and subsequently destemmed, followed by crushing and alcoholic fermentation at a controlled temperature, one part in barrique and the other two parts in tonneau and steel. The malolactic fermentation and the final phase of aging instead take place in barriques.
