San Lorenzo is produced with 100% Montepulciano grapes, cultivated in the area of Conero, one of the most important regions for the production of wines. The vineyards are located around Osimo and Ancona, where the lands are mainly characterized by clay and limestone. The average density counts 3700 stumps per hectare, trained with cordon spur pruning method. The production quantity swing from 90-100 quintals per hectare. The harvest is planned between the end of September and the first decade of October. The wine making starts with soft pressing and elimination of stalks, followed by 10-12 days maceration in steel tanks. After alcoholic and malolactic fermentation, the wine ages for 12 months, both in big barrels (50-80 hl) and barriques of 3rd and 4th passage. The maturation continues in the bottle for other 6 months before the selling.
