From the vinification of Arneis grapes in purity. The origin is the classic one of Piedmont. Harvest by hand is preceded by the thinning of the excess bunches at the end of the summer. Vinification involves soft pressing, followed by fermentation for 15 days at 16 ° C. Finally, the refinement takes place for 3 months in steel on the fine lees.
