Recioto della Valpolicella DOCG "Giovanni Allegrini", bears the name of the founder of the company who has defined it as his favorite. The grapes that produce this wine are 80% Corvina Veronese , 15% Rondinella and 5% Oseleta and come from the best vineyards of the family Allegrini, located in the heart of Valpolicella. After harvesting strictly by hand selecting the best grapes, the grapes are dried until the end of January. Fermentation takes place in stainless steel tanks for about 25 days, with daily pumping. The aging in wooden barrels is 14 months, followed by 10 months in bottle.
Characteristics of Recioto della Valpolicella
Its color is ruby red. The aroma opens with a bouquet of dried fruit and spicy notes. The palate is full and velvety , sweet but not cloying with great structure, capable of giving great emotions.
Recommended pairings while tasting this red wine
Serve in goblets of medium width at a temperature of 14°C, it is advisable to uncork one hour before being sereved. Traditionally paired with sweet dried, surprising when tasted with dark chocolate and cheeses like gorgonzola.
