The Recioto della Valpolicella is a sweet wine, with a rather intense garnet red color. The Recioto grapes come from particular vineyards located in Sant'Ambrogio di Valpolicella, in the classic area. The term Recioto derives from the Veronese dialect where "recia" means ear. It designates both the small wings or lateral bunches that crown the main bunch and which in the past were considered as the part of higher quality, and above all a cluster chosen for quality and therefore more suitable for drying. The vines used for its vinification are those of Corvina for 80%, to which are added those of Rondinella and Oseleta respectively for 10%. The geographical location of the vineyards is that of Sant'Ambrogio di Valpolicella, a hilly area, with a South-East exposition. The average altitude of the land is between 300 and 350 meters above sea level on which the vineyards stand is cretaceous, with abundant limestone, rich in skeleton. The training system is Guyot, with about 5,000 vines per hectare. The average age of the vines is 15 years and the profit is 80 quintals per hectare of vine. The harvesting era is at the end of September and beginning of October with manual harvesting. The vinification during the harvest requires that the most sparse and healthiest bunches are chosen, they are placed in plateaux inside special rooms called "fruttai", whose essential characteristic is to be dry and well aerated. Here they rest until the month of February, losing about 50% of their weight. The dried grapes are then pressed and destemmed, the fermentation takes place slowly in contact with the lees for about 20 days. It follows the aging in tonneaux for 24 months and in bottle for another 12 months.
Characteristics of the Recioto Classico DOCG
This wine has an intense garnet red color. The bouquet is elegant and very spicy, with hints of black cherry, marasca in spirit and plum. The taste is sweet, the tannins are soft and velvety, balanced and elegant.
