A refined white wine of the Sicilian tradition of the Assuli winery. It has the IGT certification. This wine is made by Catarratto, Grillo and Zibibbo grapes. The production area is in Mazara del Vallo in the Trapani province. The soils are clay, calcareous and balanced with organic substances and nitrogen. They are located at 200-250 meters above the sea level and the cultivation method is the cordon spur pruning with a density of 5000 trees per hectare. The grape harvest takes place at the end of August and the wine making process starts with a soft pressing, a clearing of the must and the fermentation in stainless steel tanks at 18°C. It follows the maturation for 8-10 months “sur lies” with several bâtonnage and a bottle refinement for 3-4 months.
Characteristics of the Donna Angelica
It has a straw yellow color and the smell has a wide fruity bouquet with floral hints. There are remarkable apricot and white pulp fruits aromas. The taste is like the smell with the addition of salt and mineral aromas.
Suggested pairings with this Sicilian wine
It is perfect with starters, fish, crustacean and soft cheeses. It must be served at 12-14°C in a high and wide wine glass.
