Description du vin

This refined and prestigious vine variety from Aosta made of black berries is used for the production of the Fumin which is honored by the DOC certification. The production area is “La Tour” and “Les Crêtes di Aymavilles” in the Aosta province. The vines are 15 years old. The cultivated is on slope morainic, loose and sandy soils which are exposed at north/west and south. They are at 650 meters above the sea level. The vines are extended for 2,5 hectares and are cultivated with the French Guyot method. The trees density is 7500 units per hectares with an annual profit of 8000 kg per hectare. The manual grape harvest takes place after the second half of October. There is fermentation in stainless steel tanks at 28-30°C. The maceration lasts 8-10 days with daily pumping over. The aging lasts 1 year in little French oak barrels of 300 liters each. The final aging period is for 1 year in bottles. This exceptional and prestigious vine variety was saved by the sure extinction of the Aosta “vignerons” and it is living a productive relaunch. From the Fumin grapes is produced an important wine suitable for a long bottling aging.

 

Characteristics of the Fumin Valle d’Aosta DOC wine

The Fumin DOC of the Les Cretes winery has dark ruby red color with purple hints. The perfume is penetrating, fruity with remarkable wood fruits hints such as black berry and blueberry, but it is also spicy with leather and vegetables aromas especially in the aged versions. The taste is warm, full with soft tannins.

 

Suggested pairings with this red wine

It has to be served with cold cuts, soups, cheeses such as the fontina or with red roasted meats, with game, braised meats all charged of taste and flavors. It has to be tasted with a snack of bread and cold cuts or cheeses. It has to be served at 18°C in Ballon wine glasses.
