The wine of Sardinia, autochthonous par excellence, the result of 100% pure Vermentino grapes. The production area is that of the territory of Sulcis, in the south-west of Sardinia. The harvest involves manual harvesting with 20 kg box between late August and early September. Previously - after the veraison - is carried out a thinning of the bunches followed by a careful selection during the final delivery in the cellar. The vinification requires the grapes to be cooled to 10 ºC before being destemmed and gently pressed. The first, more noble, fractions of must are decanted cold for 48 hours before being fermented and kept between 15 and 18 skin C. The wine remains on the fine lees for at least 4 months. It is then aged in the bottle at least 1 month before release.
