The Vermentino Costamolino belongs to the classic white line of the Argiolas company. It is honored by the DOC Vermentino di Sardegna certification. The Vermentino vines are cultivated in the company territory on hills in the Pranu Sturru-Suelli, Costa Bancodi and Perda Campus-Selegas hamlets. They are located at 190 meters above the sea level with an optimal exposition at South-east so under the positive influence of the wind. Also the soils make their part. The vine used for the production of the Costamolino Argiolas is almost 100% Vermentino grapes. The little difference is made by the addition of Sardinia DOC varietals. The climate is the Mediterranean with mite winters, few rains and very hot and ventilated summers. For this reason the manual picking of the grapes occurs in the early morning when the air is fresher. There is a careful selection of the grapes and the grapes are softly pressed. Then there is the cooling at 10°-12°C with natural settling. Finally the fermentation at 16°-18°C for 20 days and the conservation under temperature control with a short passage on fine lees.
Characteristics of the Vermentino di Sardegna Costamolino wine
The Costamolino of Argiolas wine has a straw yellow color with very light green reflections with a bright and clear aspect. The perfume is remarked by grass and spring flowers aromas with a wide acidity in the taste. It is fresh, dry, velvety thanks to the tannins, pleasant and fine. It is also delicate but with character and balanced.
Suggested pairings with Costamolino Argiolas from Sardinia
The Costamolino is perfect with sea starters, crustacean, fish soups, bass with artichokes, cheeses. It has to be served at 10°C in a wide and tall wine glass to spread the scents.
