For the production of this red wine of Mamete Prevostini Winery are used 100% Nebbiolo grapes, coming from the municipality of Montagna in Valtellina: here the soil is mostly sandy and the vineyards enjoy a southern exposure and an altitude of 400 m above sea level. During the harvest there is a careful selection of the best grapes, harvested by hand and in a box; followed by a delicate destemming with a subsequent stop in steel, where the alcoholic fermentation takes place with 15 days of maceration of the skins and controlled temperature. This is how malolactic fermentation takes place in oak, with a maturation phase that proceeds for another 12 months. Finally, aging in bottle for another 10 months.
Characteristics of this wine from Valtellina
The wine has a very intense ruby red color. The olfactory bouquet recalls red fruits and spices while the palate is velvety and with a persistent finish. Good tannins.
