This fantastic red wine is the most representative wine of the Superior Valtellina area. The Sassella is a red wine with a particular harmony which is already expressed after two or three years from the production time. It is perfect for long aging periods where the bottle has to lie down in a fresh place under constant temperature. There are used 100% Nebbiolo (Chiavennasca) grapes. The cultivation and the production take place at Castione Andevenno and Sondrio towns. The grounds are well exposed at south and they are between the 270 and 600 meters above the sea level. The soils where the Nebbiolo is cultivated are rich of ferrous rocks with a very superficial acid Ph. These characteristics give body and structure to the wine. The harvest is manual and takes place in the first decade of October. Firstly there is a long maceration under temperature control with regular pumping over and punching-down. It follows the malolactic fermentation until spring time. Finally there are 20 months of aging in Slavonian oak barrels and 9 months in bottles in fresh and dark cellars.
