This Extra Brut, made with 100% Glera grapes, is able to astonish for its class and freshness. After the first fermentation, it rests on its yeasts for two months, then it is introduced in autoclave. A great Charmat, created for happy hours or dinners with good friends. Its vineyards are located on the hills near the slopes of Dolomiti mountains, in the north of Treviso. The white wine making, without any contact with the peels, is set at a controlled temperature of 18°C. The foam creation is developed in the first spring after harvest, for a slow fermentation at 12° c in huge, closed containers and a further maturation on yeast for 2 months.
Features of Prosecco Extra Brut
The organoleptic exam shows a straw yellow colour with a refined and dynamic perlage. The rich scent is full of apple, peach, acacia flowers and citrus fruits. The taste is dry, structured and characterized by richness. The final is clear, fruity and mineral.
Recommended food pairings while tasting this Sparkling wine
It is excellent with appetizers, fish starters or fried courgette flowers. It has to be served at 6°C in a high, tapered wine glass.
