A famous sparkling wine belonging to the category of Dry, that comes from the steep hills of the exclusive district of Valdobbiadene, as the tradition of Col Vetoraz wants. Single-variety winemaking, 100% Glera. Its cultivation system is called “Cappuccina modificata” or “Metodo Valdobbiadene”, remarking the typical feature of the area. The yield reached by vineyards is 135 quintals pro hectare of cultivated land. The harvest starts on 20 September and ends on 10 October. The production technique considers a second fermentation in big pressured containers made of steel, as the “Metodo Charmat” expects. Then the white winemaking with soft pressing comes, followed by the primary fermentation (temperature controlled) and concluded by static decanting. The period for foam creation swings between 30-40 days followed by an aging of 1-3 months.
Features of Prosecco Superiore DOCG
This sparkling wine has a tenuous but shiny colour, with a faint and persistent perlage. The scent recalls floral hints of rose, citrus fruits, acacia and intense marks of white peach, pear and apple. The taste is classy, aromatic and well structured.
