From 100% pure vinification of the precious Glera grapes. The origin is the classic one of Veneto, in the hilly area in Valdobbiadene, the heart of the DOCG. The vinification involves the use of whole grapes with soft pressing and static racking for about 8 hours of the musts at 15°C. Fermentation in steel at a controlled temperature between 15°C and 18°C. The sparkling process follows the classic Martinotti method (or Charmat) and the particular Setàge Canevel protocol is used: this involves the refermentation at low temperatures between 12°C and 14°C and a prolonged refinement on the fine yeast deposit. Fermentation continues until the fermentable sugar runs out.
