From the skillful vinification of Chenin Blanc. An innovative and experimental grape variety for a modern, fresh and captivating brut. The territory of origin is that of south-western Sicily, in the Municipality of Menfi in the Province of Agrigento. The vine used is as anticipated the rare one of Chenin Blanc 100% pure. The classification is IGT Terre Siciliane sparkling wine. The soil on which the grapes rise is of medium texture tending to limestone. The vineyard has a yield of 85 quintals per hectare and the density of vines is 4'500 per hectare of land planted with vines. The soils have a unique elevation in the plain located at 250 meters above sea level. The exposure is optimal, to the southeast and south.The vinification foresees that the grapes, after having been destemmed and cooled to about 8° C, are softly pressed. The must obtained is decanted and then is affected by the addition of selected yeasts. Then the aging takes place exclusively in steel containers at low temperature to preserve fragrances and fragrances. Finally, the wine is aged for 3 months in bottle.
Spumante Chenin Blanc Brut's features
The color is straw yellow, the scent is mineral and saline with balsamic notes and delicate cedar skin, citrus flowers and thyme. The taste is open and vibrant; it expresses great freshness and the citrus notes of cedar peel return.
