This wine is made by Carricante grapes cultivated on volcanic soils for the collection “Sosta Tre Santi” and it rests for 18 months in bottle. The delicate perlage, the elegance, the freshness and the mineral taste make this sparkling wine very good for the appetizer or during the meal. The cultivation soils are sandy, rich of minerals, located at 700-750 meters above the sea level. The cultivation method is the trellised with the cordon spur pruning. There is a manual picking at the end of September and 18 months of refinement on the yeasts in bottle. The fermentation takes place in stainless steel under temperature control for 3 weeks and a refermentation in bottle.
