The Pinot Nero grape, contrary to the traditional methods that require its vinification in wood, is vinified here completely in steel. This choice aims to highlight the producer's desire to create a fresh and pleasant wine, which stands out for its elegance and finesse. The Red Wine Pinot Noir of the Les Cretes Winery, symbol of Val D’Aosta is an exceptional and refined product vinified in purity with autochthonous Pinot Noir grapes grown within the company. The production and breeding area of the vines allows this wine to boast the certified PDO designation. The vineyards located in La Tour of Aymavilles (AO), have an average age of 15 years and develop a glossy black berry, of the type belonging to the polyclonal selection of Burgundy, international stock. The land on which they are bred is morainic, loose and sandy, characterized by a steep slope. The exposure is towards south and all the lands are placed at an altitude of 650 meters above sea level. The Les Cretes winery produces about 13,000 bottles of Pinot Noir per year, destined for all the European market. To reach this fairly limited number, the wine-growing house can count on about 2 hectares of vines that are cultivated using the Guyot system. The plant of about 7,500 feet per hectare has an average yield of 9,000 kg / ha. Features that only at certain latitudes and with certain natural exposures of the land can be achieved. The harvest takes place in October and roughly starts from 14/16 of the month and ends by 30. The vinification process involves the fermentation of the softly pressed must for about 8/10 days in stainless steel tanks at controlled temperature. 30 ° C.
