From the vineyards of Les Cretes of Aymavilles of morainic and sandy matrix and exposed to the west, this red wine is born with 100% Pinot Noir grapes. The harvest at the beginning of October precedes the selection and destemming phase of the chilled grapes, then there are 2-day whole berry cryomaceration and 12-day fermentation at controlled temperature. The aging requires the aging in tonneaux for 18 months and then in bottle for another 18 months.
Characteristics of this Aosta Valley wine
It has a bright ruby color. The olfactory bouquet evokes fruity notes of ripe red fruit and hints of cocoa. The palate has a slightly savory vein and a velvety tannic texture.
