100% Nebbiolo grapes, dried. The vineyards are located in the area DOCG Sforzato della Valtellina, in Berbenno, Sondrio, and Montagna, in Lombardy. The manual harvest starts in the first decade of October. During this phase, the selected bunches are placed in boxes of 4-5 kg and dried naturally till the 15th of December. During a second selection, the mouldy grapes are immediately eliminated. After the soft pressing, the grapes are poured into inox tanks where the alcoholic fermentation starts. The maceration on skins at 25° lasts 18 days. The malolactic fermentation is managed in oak barrels, where the wine ages 18 months. The maturation continues in the bottle for 10 months.
