It is one of the last born in the Castello Monaci family coming from a "single vineyard" of Moscatello Selvatico planted in 2005, in front of the main entrance to the winery. It is undoubtedly the most representative vineyard of the company, surrounded by centuries-old pines and crossed by a path of aromatic herbs that leads directly to the castle. The plants were donated to President Seracca Guerrieri by the Colosso di Ugento family, who had taken them from a very old family vineyard. They are therefore vines that cannot be reproduced on the market and their low yield yields a fullness characterized by an acid shoulder that is very difficult to find in Apulian wines. After the manual harvest in the second decade of September, the grapes are subjected to drying, then they are pressed and softly pressed before fermenting in steel at a low temperature.
Fiano Moscatello Selvatico Salento Heos Castello Monaci’s features
A golden yellow colour, with slight amber shades. The nose is rich and intense, with floral and herbaceous hints of orange blossom and sage in evidence. The taste distinguishes the sip, sweet and enveloping, with a pleasant fresh sensation on the palate, with fruity notes of peach and apricot that lead to the long and persistent caramelized finish.
