The Moscatello Selvatico from the Apulian winery Polvanera comes from the Vigneto Marchesana in Gioia del Colle and in the Vigneto Macchia di Gatto in Casamassima, near Bari. The grapes used for its production are 100% Moscato Bianco, harvested during the fourth week of September. After harvesting, the grapes are subjected to soft pressing with short maceration in the press for 2/3 hours: fermentation in stainless steel for 20 days at a temperature of 13 ° C follows. Finally, the final phase of aging takes place, which requires a stay in steel for 6 months and then a year in the bottle.
Characteristics of this white wine
The organoleptic test shows a straw yellow color with light greenish hues; delicate citrus notes of lemon, peach and rose create the rich olfactory bouquet. On the palate it is aromatic and with the right balance, with a mineral finish.
