The Dolcetto d'Alba DOC Ceretto is produced in of Alba and for its production there are used 100% Dolcetto grapes. Rossana is a beautiful plot on the outskirts of Alba, in a hilly area, historically recognized as one of the toponyms of excellence for Dolcetto. From this variety are born those that can be considered the daily wines par excellence, those that best match the dishes of the Piedmontese rural cooking. It is to give voice to this exhibition necessity that we have chosen the path of a classic vinification, capable of enhancing the primary characteristics of this splendid grape. Space therefore to the exclusive use of steel in the production process in order not to contaminate the bouquet, which remains candid and pleasantly winy. Particular attention is then given in the phase of macerations, deliberately short, able to contain the exuberance of the tannin, which is usually always vigorous for the Dolcetto grapes. The aging lasts for 6 months in steel tanks, then the wine is bottled normally before the next harvest. The vinification takes place in steel tanks, with constant control of fermentation temperatures, racking and decanting carried out at the time. It doesn’t pass in wood not to facilitate the alteration of the aromas and flavors of the varietal.
Characteristics of the Rossana Dolcetto d'Alba DOC
It has a bright ruby red color. The smell is winy rich of flower and fruit aromas very persistent. The taste is dry, with a light aroma of almond typical of the varietal. The proof is 14%.

The Dolcetto D’Alba Rosanna of Ceretto must be served at 16-18°C in a wide and tall wine glass. It is perfect with the starters especially those of the Langhe tradition. It is great also with the light vegetables creamy risottos.
