Dolcetto d'Alba from the Piedmontese winery Roagna is made from 100% Dolcetto grapes from the winery's historical vineyards, Pajè and Carso. Thanks to the proximity of the Tanaro river, the climate is mild and together with the calcareous marl soil guarantees the production of high quality grapes. The Carso vineyard, on the other hand, is located near the Barbaresco fortresses and is characterised by a sandy calcareous clay soil; for both vineyards, manual harvesting takes place in September only after the bunches are perfectly ripe; before vinification, two very careful manual selections are carried out to check the integrity of the grapes. Fermentation then takes place in wooden vats with the use of indigenous yeasts for about 10 days: after this short period of time, maceration takes place using the submerged cap method for 3 months: the procedure involves filling the vats, thus leaving the skins submerged, so that the substances they contain are released into the wine. Maturation takes place in oak barrels for one year.

On organoleptic examination, it has a ruby red colour. On the nose and palate, it is striking for its intensity and hints of red berries and spices.

Particularly suitable with meat dishes, from hors d'oeuvres to main courses: try it for example with a platter of cold cuts or a risotto with mushrooms and sausage; excellent with grilled meat. Serve at a temperature of 16-18°C.
