A wine that fully reflects the local tradition, so much so that the wording also bears it in its prestigious label. The grape used for its vinification is 100% Nebbiolo. For the vinification, the grapes, just harvested, arrive in the cellar intact and here is quickly crushed and gently destemmed to extract from the skin and from the outer area of the berry only the most noble and aromatic fractions. The fermentation, at controlled temperature, takes place in thermo conditioned tanks. The maceration on the skins lasts about 8 days, interspersed with frequent pumping over to allow the must to appropriate all the trace elements present and to gently extract the coloring material. Racking only happens when all the sugar has turned into alcohol. The aging of the wine requires that it is decanted in vitrified cement vats, specially made with a cork insulation, keeps for a long time the post-fermentative temperature of about 22# C. In this way malolactic fermentation starts spontaneously, ending in a short time. It is aged for one year in Slavonian oak and French oak barrels. It is then assembled in a classic large oak barrel of Slavonian oak. The wine completes its aging in bottle before being put on the market. The Barbaresco reaches maturity after 3 years from the harvest and the ripening plateau is between 3 and 20 years.

The wine has a garnet red color, with ruby reflections. The aroma is intense, persistent, with a clear hint of fruit, rose hips and spices. The taste has an intense full-bodied flavor, but, at the same time, harmonious and balanced, with sweet tannins, never too much in evidence.

It is the ideal companion of tasty pasta dishes, pasta with meat sauce, agnolotti, red meat, roasts, stews, hard cheese of medium seasoning. The optimal serving temperature is 16 ºC.
