This prestigious wine is produced with 100% Sangiovese Grosso grapes cultivated in the areas of the estate Poggio al Granchio. The vineyards are located between 400-450 meters elevation. After the manual harvest starts the maceration, managed at 5-6°C. During the fermentation process, the temperatures are always controlled in order not to pass 27°C. Technical procedures preserve the mineral and fruity features of the wine. The aging starts in french oak barrels of 300 l to end in the ones of 60hl, for 30 months. The name “Poggio al Granchio” comes from a small tin located in the center of the property, where a lot of crabs live.
