For the production of this particular and refined wine of the Tuscany tradition, the Melini winery uses the Vernaccia di San Gimignano grapes together with other local vines all belonging to the DOCG area. The vineyards are located in San GImignano at 250-300 meters above the sea level and the vines are cultivated with the Guyot method on sandy and limestone soils. The grape harvest takes place in the first decade of September and it follows a soft pressing. The must, after the decantation, ferments with selected yeasts at 14-16°c to preserve the aromas.
