Enrico Serafino’s Alta Langa Extra Brut Blanc de Blancs "Propàgo" is produced with 100% Chardonnay grapes, unlike the other Alta Langa grapes of the same company; it is the Blanc de Blanc symbol of the House, in fact its name comes from the Latin and means gem, harvested. The vineyards, which are between 10 and 25 years old, are located in the Piedmont territory of Sessame, Mango and Trezzo Tinella: here the soil is clay-limestone. After the manual harvest, the bunches are carefully selected and then pressed in the absence of nitrogen and without the use of augers, to protect the grapes as much as possible. The fermentation takes place in stainless steel tanks at controlled temperature, remaining for 6 months on the lees with batonnage. Then the fermentation takes place in the bottle, which provides for a rest on the lees of at least 36 months before disgorging.

On the organoleptic examination, this sparkling wine from Cantina Enrico Serafino has a straw yellow color with golden reflections. The perlage is fine and persistent. The nose has mineral, fruity and citrus notes; the mouthfeel is complex, vertical, dry and intense, with a mineral aftertaste.
