The grape variety used for the vinification of this sensational label is 100% pure Sauvignon. The origin is the classic one of Russiz Superiore-Capriva del Friuli. Altitude: between 80 and 200 meters above sea level. Vinification and fermentation, started after harvesting the grapes, for a 5% overripe, requires that these are separated from the stalk. The juice and pulp undergo a cold maceration, then a slight pressing that allows the separation from the skins. 30% of the must is fermented in oak casks, the remaining in steel tanks. Finally, the aging of the wine that is left to rest about three years on the lees and one year in the bottle.
Characteristics of this Sauvignon Doc
The appearance of the wine is straw yellow with golden hues. The nose denotes fantastic, intense and elegant vegetal and spicy notes such as sage and thyme, well blended with yellow fruits such as peach and apricot. The taste on the palate freshness and flavor blend beautifully. Structured and balanced, soft with good extract, long finish.
Suggested food pairings while tasting this white wine
It goes mainly with medium-aged blue cheeses, grilled fish, dishes based on vegetable vegetables in general such as risotto with asparagus, peppers or spices such as sage and mint. The optimal serving temperature is 8 ºC.
