The Brunello di Montalcino from the Tuscan winery Canalicchio di Sopra is produced with 100% grapes Sangiovese grown in the Canalicchio and Montorsoli hills; the soils are clayey and rich in mineral components and this will give a certain sapidity and a slight acidity to the wine in the aging phase. After the manual harvest, the grapes subjected to pressing are then fermented in steel tanks at a controlled temperature; follows maceration on the skins for 25 days. The refinement instead requires a stay of 3 years in Slavonian oak barrels.
Characteristics of this Tuscan wine
Organoleptic examination this wine shows a bright ruby red color; on the nose the finesse and depth immediately emerge with hints of small red fruit and flowers, to then move on to spicy aromas of licorice and aromatic herbs. The tannin is elegant and fine and the persistence is very long.
Recommended pairings while tasting this Tuscan wine
Perfect wine with both grilled and stewed red meats; to try with blue cheeses and risotto with mushrooms. To be served at a temperature of 16-18°C in a not very wide wine glass.
