CANALICCHIO DI SOPRA

Founded in 1962 by Primo Pacenti, Canolicchio di Sopra Winery covers about 60 hectares of land and is located north-east of the Montalcino hill, Unesco heritage since 2004: the link with the territory is highlighted by the desire to use Sangiovese grape variety only and in order to enhance the Cru Canalicchio and Montesoli.The production is based exclusively on Brunello di Montalcino and Rosso di Montalcino with a maniacal procedure aimed at enhancing all the peculiarities of the cru: it begins with the harvest which involves the careful selection of the best grapes and proceeds with fermentation in steel tanks , with temperature controls and daily pumping over in order to obtain the distinctive feature of these wines from the skins. The refinement takes place strictly in Slavonian oak barrels.Since 2001 the company has been led by the grandchildren Francesco, Marco and Simonetta who carry on the family tradition while respecting the bond with the territory and with the aim of producing wines of undoubted quality.
