The white wine vermentino Bolgheri of the Guado al Tasso estate is honored by the DOC Bolgheri certification. It is produced by 100% Vermentino grapes cultivated in the company territory. Camillo is the name of an ancient vineyard of the Guado al Tasso estate that can offer a particular interpretation of the verdicchio in the smell and taste. The Vermentino of the Camillo vineyard is late picked which gives to the grapes a sapid, balanced and pleasant taste. It increases its quality after an aging period in bottle. There are two moments for the manual picking: the first one in the half of September while the second one the 12th of October. The grapes are destemmed and softly pressed. The must is cold for 24 hours to help the natural decantation then the clean must is put in stainless steel tanks and it starts the alcoholic fermentation at 16°C. It is added a little quantity of the first picking to give a touch of acidity and freshness. The 10% of the wine obtained has to ferment in second passage barrels. Then the wine kept for three months on the fine lees is added to the previous 10% to be bottled at the half of March and finally it ends the aging period in bottle.
Characteristics of the Bolgheri Vermentino "Guado al Tasso"
The Camillo wine has a straw yellow color with golden reflections. The smell is complex with ripe candied fruits aromas together with citron, honey and floral hints. The taste is sapid, persistent, full and perfectly balanced in the minerals to give pleasantness. It can be improved with some aging years.
Suggested pairings with this white wine
The Camillo Vermentino Bolgheri DOC wine of the Guado al Tasso estate is perfect with sea food or with grilled chicken or turkey in humid. It is perfect also with delicate cheeses or with bruschetta with tomato or with artichokes paté. It has to be served in a high and wide wine glass at 10°-12°C.
